Asian Ribs

Description

Mouthwatering Asian ribs with an addicting marinade. WARNING: You may be caught stuffing your face… it’s okay.


Ingredients

Scale

Meat:

  • one rack of Baby Back, or St. Louis pork ribs, alternately, this is killer for pork tenderloin or pork chops. Anything pork

The marinade:

  • 1 TBS (15 ml) Kosher salt
  • 1 TBS brown sugar
  • 1 TBS sesame oil
  • 1/4 cup (60 ml) rice wine vinegar
  • 1/4 cup water
  • 3 TBS (45 ml) soy sauce
  • 1 bunch green onions cut in 2-inch sections
  • 1 smashed head of garlic
  • 1 finger’s length ginger (3 TBS) grated

The Sauce

1 TBS (15 ml) each of:

  • rice wine vinegar
  • soy sauce
  • sesame oil
  • honey
  • miso paste
  • Gochujjang
  • corn starch

Garnish

1 tsp (5 ml) sesame seeds 


Instructions

  1. Start by prepping your ribs. See video for tips on prepping your meat.
  2. Get a gallon-sized ziplock and start chopping and dicing your marinade ingredients. Don’t forget to peel your ginger before grating it. 
  3. Toss marinade ingredients in bag and shake to [mostly] dissolve sugar.
  4. Prep ribs. Use video as a guide for better rib prepping.
  5. Cut ribs in half. Place in bag with marinade ingredients. Shake again.
  6. Let ribs marinate overnight.
  7. Remove ribs from marinade and rinse under cool water.
  8. Start grill.
  9. Cover ribs in foil and place on grill.
  10. Cook for 40-minutes, flipping every 10-minutes.
  11. Uncover ribs and cook an additional 10-15-minutes, or until desired level of char is achieved. 
  12. Remove ribs from heat and cover them [again] with foil. This tenting of the meat should not be skipped as the juices will reabsorb into the ribs. Let rest tented for 5-15-minutes.

The Asian Rib Sauce

  1. Combine ingredients in saucepan and whisk until it boils. 
  2. Whisk corn starch into boiling sauce. Once sauce is smooth, remove from heat and coat RESTED and CUT ribs!
  3. Get yo’ grub on!

Notes

Don’t forget to remove the silver skin. This exposes the meat to the ridiculousness of the marinade and also rids your ribs of tough sinew.
