  • Author: Ben

Key lime mango sauce completes this lemon garlic pasta. File this one under mind-blowingly delicious AND quick and simple.

  • Flesh of 1 eviscerated, ripe mango
  • juice of 7 key limes or one boring lime
  • 1 TBS (15 ml) honey
  • 1/4 tsp salt
  • zest of 4 key limes or half of a boring lime
  • 8 oz (240 ml) capellini or other pasta
  • 8 TBS (120 ml) butter
  • sliced head of garlic
  • 6 plump shrimp
  • 1 lemon zested, halved, and ready to squeeze
  • 6 basil leaves chopped

  1. Start your water boiling. Add in a TBS (15 ml) of salt per 4 cups (960 ml) of water.
  2. Zest four of your key limes (or a single boring lime) and place in blender, along with the juice of your 7 key limes, flesh of your super ripe mango, honey, and 1/2 tsp [2.5 ml] kosher salt. Blend until smooth and beautiful!
  3. Set your mango sauce aside.
  4. Now is a good time to throw your pasta in your boiling water. Top Tip: Don’t forget to stir your pasta.
  5. Take your butter and melt in a pan over medium low heat. When melted, sir in your sliced garlic. Sauté until garlic is golden. Remove garlic from pan and set aside.
  6. IMMEDIATELY lay your shrimp in the [now garlicy] butter. Scoop butter over shrimp as they cook. Flip when tails change color. Keep scooping butter over them. When cooked remove from pan and set aside.
  7. Remove pan from heat. [don’t burn the butter!]
  8. Test pasta. If perfect, pull from water and immediately toss in butter. Squeeze lemon on pasta as well as a pinch of salt.
  9. Place pasta and shrimp on plate in a way appealing to social media followers. Spoon on some mango sauce. Garnish with chopped basil, sautéed garlic slices, fresh cracked pepper, and lemon zest.

Want to kick up your shrimp a bit? Sprinkle your butter with Korean chili flakes before you cook them. Or, if you’re feeling particularly adventurous, use some chopped Tien Tsien chilies!
