The Ultimate Pinto Beans Packed With Fiber and Flavor

  • 2 thick bacon slices (use quality bacon, not the cheap paper-thin stuff)
  • 1 chopped yellow onion
  • 1 diced head of garlic
  • 3 cups (720 ml) sorted pinto beans

  1. Start by sorting your beans. This will be lion’s share of the prep time, so be patient and use the video as a guide.
  2. Rinse your beans and remove any that float.
  3. Dice your garlic and chop your onion.
  4. Place everything (don’t forget your bacon) in a pressure cooker. Fill the pressure cooker with water going two inches above the beans.
  5. Cook on high pressure for 60-minutes.
  6. When finished, vent. Only salt as many beans as you’ll be eating, otherwise they’ll absorb the salt overnight and you’ll have to re-salt your leftovers.
  7. Make red chile and crush your bowl of goodness!
