Tender, perfect oven roasted rosemary lamb chops every single time. This is the recipe might just make a lamb lover out of you.



For Roasted Lamb Chops Marinade

  • 1.5 lbs (about 1 kg) lamb chops
  • 1/2 TBS (7.5 ml) pressed fresh mint
  • 1/2 TBS (7.5 ml) stripped fresh rosemary
  • 1 cup (240 ml)plain yogurt
  • 1/2 TBS (7.5 ml) kosher salt

For Rosemary Infused Salt

  • 1/2 TBS (7.5 ml) finely chopped rosemary
  • 1/2 TBS (7.5 ml) kosher salt


  1. Clean lamb chops with a butter knife. The VIDEO goes into detail about how this is accomplished.
  2. Prep rosemary and mint.
  3. Combine all ingredients in bowl or gallon ziplock. Smush ingredients around with hands (if using a bag) or stir with spoon if using a bowl.
  4. Let sit in fridge overnight.
  5. Remove from fridge and rinse lamb chops. 
  6. Make your rosemary infused salt and sprinkle over rinsed lamb chops. 
  7. Set oven to 350 *F (176 *C) and let lamb get to room temperature. 
  8. Set lamb on foiled jelly roll pan and place in oven. Check with meat thermometer at 15 minutes.
  9. When rare temperature is reached (see below chart), set oven to broil and finish lamb chops under the broil for 2-3 minutes. WATCH YOUR LAMB LIKE A HAWK. BROILING IS A FAST PROCESS.
  10. Remove from oven and let rest for 5-8-minutes. 




Quick lamb cooking reference:

  • 115-120 *F (46-48 *C) = rare
  • 120-125 *F (48-51 *C) = medium-rare For lamb I shoot for 130 *F (54 *C)
  • 130-135 *F (54-57 *C) = medium
  • 140-145 *F (60-62 *C) = medium-well
  • 150+ *F (65+ *C ) = well done
